Anyone know roughly how much weight can be taken off the flywheel without making the engine braking effect too great?

Take off as much as it is safe to as there is always a risk of them breaking up if too much material is removed from critical areas.
I wouldnt be concerned about weights, Weigh it once it is finished

i think the sr20's and rb25's are about 22lbs, i know the fj 20 lightened ones are around 10lbs and 12lbs, i got a custom one made at 16lbs from en8, alot are made from chrome moly.just some useless info, that don't really help.
